This pizza is a must bake for the holiday season or any moment when winter squash is in peak form. Delicata squash with it’s earthy sweetness is a great choice. I combine the roasted winter squash with rich caramelized onions and dates. I add in the subtle crunch and acidity of chopped walnuts and a finale of heat from sliced jalapeño chiles. Ingredients

  • 1 Small Delicata Squash Halved, seeds removed, sliced to 1/4 in thickness.
  • 2 Large Brown Onions Sliced,1/4 in thickness.
  • 1/4 cup Walnuts Roughly chopped.
  • 1 Date Pitted and cut into small slices.
  • 1 Jalapeño (optional) Thinly sliced. I like to use a red jalapeño for this recipe.
  • 100 g Fresh Mozzarella (approximate)
  • 1 tsp Minced Fresh Chives
  • Olive Oil
  • Pizza Dough A naturally fermented (sourdough) recipe & guide. Using store bought dough? Check out my vid on How to Make Store Bought Dough Awesome!

Instructions

Caramelized Onions

  • Heat a heavy bottom pot over medium high heat. Add 1-2 tbsp avocado or canola oil.
  • Add onions to pot, Stir to coat in oil. Once the onions have begun to sweat, lower heat and cool till golden brown stirring often. About 1 hour.
  • Season to taste with salt and pepper. I like to add a dash of soy sauce and a dash of Worcestershire Sauce (optional).

Roasted Delicata Squash

  • Preheat oven to 375f. Line a baking sheet pan with parchment paper.
  • Add squash slices to a small bowl, lightly coat in olive oil. Season with salt and pepper. Arrange on baking sheet with room between slices.
  • Roast till just softened (easily pierced with a fork). Do not overcook, the squash will roast more on the pizza. About 10 minutes.

Pizza

  • Watch the video for the full how to!
  • Preheat your Ooni Pizza Oven for at least 30 minutes, I like to heat the center of the oven deck to around 850f before loading this style of pizza.
  • Begin building the pizza by adding the dates and walnuts to the stretched pizza dough.
  • Top with caramelized onions followed by the delicata squash. Add sliced jalapeños. Drizzle with olive oil and season with salt and pepper.
  • Bake in your Ooni pizza oven till fully baked and nicely colored (I aim for a 3-4 minute bake for a more crispy bottom) Watch the video for the real time bake!
  • Let the crust set on a wire rack for a least 20 seconds. Top with minced chives. Slice, serve immediately. I serve my pizza on this 14" Wooden Pizza Peel.

Notes

In the Winter Squash and Caramelized Onion Pizza Video I’m using the 14″ Pizza Peel from Ooni to load the pizzas and this 12″ Perforated Peel is currently being used as my turning peel. I always let my pizzas rest for a short while to ensure the crust doesn’t get soggy, they kick it on this half sheet pan rack set. I use this pizza cutter. I serve my pizza on this 14″ Wooden Pizza Peel.

  • Add a generous amount of whole basil leaves
  • Top with fresh mozzarella. You can tear the mozzarella into marble sized chunks directly onto the pizza or cube or cut into strips ahead of time.
  • Drizzle with olive oil.
  • Bake in your Ooni pizza oven till fully baked and nicely colored (I aim for a 3-4 minute bake for a more crispy bottom) Watch the video for the real time bake!
  • Let the crust set on a wire rack for a least 20 seconds. Top with additional fresh basil if desired. Slice, serve immediately. I serve my pizza on this 14" Wooden Pizza Peel.

World’s Best Pizza Sauce Recipe & How To Video

Pizza sauce shouldn’t be complicated. Source the best tomatoes you can find and treat them very simply. The tomatoes should be the star; bright, fresh, and just the right balance of acidity. It’s a beautiful thing that something so simple can taste so delicious.

I like to use this sauce as the base for all my red sauce pizzas. I add additional flavors to the sauce such as dried oregano, garlic, and onions directly on the pizza. This method allows you to create a variety of pizza styles with one batch of sauce. Perfect for a pizza party with your Ooni Pizza Oven.

Fire Roasted Shishito Peppers

  • This can done while your Ooni pizza oven preheats. Watch the video for the full how to!
  • Roast whole peppers till blistered, 1-2 minutes.
  • Reserve 5-7 whole, with just them stems removed. Roughly chop remaining peppers.

Pizza

  • Watch the video for the full how to!
  • Begin building the pizza by applying 2-3oz (you just want a thin slick) of tomato sauce (I use a ladle) to the stretched dough. Sprinkle with oregano.
  • From the crust in begin adding mozzarella, breaking into chunks about the size of a large marble.
  • Top with sliced red onion and olives.
  • Top generously with chopped Shishito Peppers followed by the whole peppers. Arranging so every slices ends up with a whole pepper.
  • Drizzle with olive oil. Season with sea salt.
  • Bake in your Ooni pizza oven till fully baked and nicely colored (I aim for a 3-4 minute bake for a more crispy bottom) Watch the video for the real time bake!
  • Let the crust set on a wire rack for a least 20 seconds. Slice into 6 slices, serve immediately. I serve my pizza on this 14" Wooden Pizza Peel.
