Mushrooms Two Ways | Two easy mushroom recipes for pizza | How To Video

Mushroom pizzas are an all time favorite of mine. Here I show you two easy ways to prepare mushrooms for topping pizzas. The Fancies and the The Classic! Two epic shroom preparations for your Ooni Pizza Oven.

Fancy Mushrooms for Pizza

This is another all-timer for me. A simple mushroom pizza topping that feels super luxe but comes together really easily. This is one to bust out for date night even if that just means crushing a whole pizza to your dome. A mix of mushrooms sauteed with fresh thyme, garlic and shallot finished with a little sherry vinegar and soy sauce. This one feels fancy pants even if you aren't wearing any.

Ingredients

  • 300-400 g Mixed Mushrooms Sliced. Any fresh variety will do. Button, cremini, shiitake, portobello, oyster, maitake, chantrelle, etc. Whatever interesting ones you can your hands on! Wild foraged even better.
  • 1 clove Garlic Minced.
  • 1 Small Shallot Diced.
  • 1 sprig Fresh Thyme Leaves only.
  • 2 tbsp Avocado Oil or Olive Oil
  • 1 tbsp Butter I use grassfed unsalted butter
  • 1 tsp Sherry Vinegar (approximate) A good dash.
  • 1 tsp Soy Sauce

Instructions

  • Watch the video for the full how to!
  • Add oil to large pan over medium high heat.
  • Add mushrooms, do not overcrowd the pan.
  • Sauté till lightly browned.
  • Lower heat to low and add butter. Top with minced garlic, shallots, and thyme.
  • Cook briefly over low heat, you don't want the garlic to brown.
  • Add sherry vinegar and soy sauce. Scraping up any bits left on the pan.
  • Season to taste with salt and pepper.
  • Let cool briefly before topping pizza or store in a deli container.

I’m using the 14″ Pizza Peel from Ooni to load the pizzas and this 12″ Perforated Peel is currently being used as my turning peel. I always let my pizzas rest for a short while to ensure the crust doesn’t get soggy, they kick it on this half sheet pan rack set. I use this pizza cutter. I serve my pizza on this 14″ Wooden Pizza Peel.

Classic Mushrooms for Pizza

  • Preheat oven to 400f (fan on if your oven has the option).
  • Add sliced mushrooms to a large bowl.
  • Toss mushrooms with 1-2 tbsp olive oil and season generously with salt.
  • Roast till the mushroom are lightly browned. Check after 5 minutes. Should take 5-10 minutes. Do not overcook!
  • Remove from oven and toss with sherry vinegar . Season to taste with salt and pepper.
  • Let cool briefly before topping pizza or store in a deli container.
