Shishito Moments of Zen. Roasted right in the oven and on to the pie. Chiles of various strains make their way onto my pizzas on the reg. Shishitos though, always getting snacked. The time has come to change that. This one is packed with shishito peppers, two ways. Chopped so it’s in every bite and a few fatties stuffed in there just to make sure you can’t possibly forget what you’re eating.
While your Ooni pizza oven is heating up this is a great time to roast your vegetables. Don’t let that heat go to waste!

Fire Roasted Shishito Pepper Pizza | Recipe & How To Video
Ingredients
- 10-12 Fresh Shishito Peppers Padron peppers would also work here.
- 3-4 Olives Pitted and halved. I use Kalamata.
- 1/4 cup Sliced Red Onion
- Oregano I use Calabrian oregano.
- 2-3 oz Basic Pizza Sauce I use Bianco DiNapoli Whole Peeled Tomatoes. (recipe)
- 100 g Fresh Mozzarella (approximate)
- Olive Oil
- 1 dough ball Pizza Dough A naturally fermented (sourdough) recipe & guide.
Instructions
Fire Roasted Shishito Peppers
- This can done while your Ooni pizza oven preheats. Watch the video for the full how to!
- Roast whole peppers till blistered, 1-2 minutes.
- Reserve 5-7 whole, with just them stems removed. Roughly chop remaining peppers.
Pizza
- Watch the video for the full how to!
- Begin building the pizza by applying 2-3oz (you just want a thin slick) of tomato sauce (I use a ladle) to the stretched dough. Sprinkle with oregano.
- From the crust in begin adding mozzarella, breaking into chunks about the size of a large marble.
- Top with sliced red onion and olives.
- Top generously with chopped Shishito Peppers followed by the whole peppers. Arranging so every slices ends up with a whole pepper.
- Drizzle with olive oil. Season with sea salt.
- Let the crust set on a wire rack for a least 20 seconds. Slice into 6 slices, serve immediately. I serve my pizza on this 14" Wooden Pizza Peel.
