Brussels Sprouts, Apple, & Caramelized Onion Pizza Recipe & How To Video
A seasonal sourdough pizza loaded with with roasted Brussels sprouts, rich and sweet caramelized onions, and diced apples. Roughly chopped walnuts add texture and more roasted nutty flavors. The combination makes for a delicious vegetarian pizza. Not veg? Adding some bacon here is a delicious call. I hope you enjoy.

Brussels Sprouts, Apple, and Caramelized Onion Pizza
Ingredients
- 1/2 cup Roasted Brussels Sprouts (recipe follows)
- 1/2 cup Caramelized Onions (recipe follows)
- 1/3 cup Diced Apples
- 1/4 cup Walnuts Roughly chopped.
- 1 clove Garlic Thinly sliced.
- 100 g Fresh Mozzarella (approximate)

Instructions
Caramelized Onions
- Slice 2 large brown onions about 1/4 in. thick.
- Heat a heavy bottom pot over medium high heat. Add 1-2 tbsp avocado or canola oil.
- Add onions to pot, Stir to coat in oil. Once the onions have begun to sweat, lower heat and cool till golden brown stirring often. About 45 minutes.
- Season to taste with salt and pepper. I like to add a dash of soy sauce and a dash of Worcestershire Sauce (optional). Let cool before topping pizza.
Roasted Brussels Sprouts
- Preheat oven to 400f with fan on. Quarter 2-3 cups Brussels sprouts. Reserve any leaves that fall off in the process.
- Toss quartered Brussels sprouts with olive oil and season with salt and pepper.
- Roast until lightly charred, about 8 minutes. Let cool before topping pizza.
Pizza

- Preheat your Ooni Pizza Oven for at least 30 minutes, I like to heat the center of the oven deck to around 850f before loading this style of pizza.
- Begin building the pizza by adding the fresh mozzarella, sliced garlic, and walnuts.
- Top with roasted Brussels sprouts followed by the diced apple. Scatter any reserved Brussels sprouts leaves over the pizza. Season with salt and pepper.
- Let the crust set on a wire rack for a least 20 seconds. Slice, serve immediately. I serve my pizza on this 14" Wooden Pizza Peel.
