Radicchio & Cherry Pizza Recipe
The Santa Barbara Farmers Market is a source of constant inspiration for new pizza recipes. I love eating seasonally, supporting our local farmers, and importantly eating really good food. The market here does not disappoint. Not a trip goes by that I don’t leave thinking that I just tasted the best thing ever.
For this pizza I’m combining some farmers market finds in a very simple way and letting them shine. Bitter radicchio is paired with sweet and tart cherries making for an absolutely delicious farmers market pizza experience. A little funk from the Gorgonzola cheese keeps things interesting and makes for a classic pairing in pizza format. I hope you enjoy! One Love!

Radicchio & Cherry Pizza
Ingredients
- 1 small head Radicchio Cleaned and leaves separated.
- 1/4 cup Fresh Cherries Pitted.
- 1 small Shallot Thinly sliced.
- 2 tbsp Gorgonzola Cheese Crumbled. Any mild blue cheese would be great here.
- 100 g Fresh Mozzarella Cheese
- Extra Virgin Olive Oil

Instructions

- Preheat your Ooni Pizza Oven for at least 30 minutes, I like to heat the center of the oven deck to around 850f before loading this style of pizza.
- Begin building the pizza by topping the stretched dough with the mozzarella and Gorgonzola cheese. Next add the pitted cherries (you don't want them to burn). Top with a generous amount of radicchio leaves. They will shrink a ton in the oven, go big! Add the sliced shallots. Drizzle with olive oil. Season with salt and pepper.
- Let the crust set on a wire rack for a least 20 seconds. (optional: drizzle with balsamic vinegar) Slice, serve immediately. I serve my pizza on this 14" Wooden Pizza Peel.
