Winter Squash & Caramelized Onion Pizza Recipe & How To Video
This pizza is a must bake for the holiday season or any moment when winter squash is in peak form. Delicata squash with it’s earthy sweetness is a great choice. I combine the roasted winter squash with rich caramelized onions and dates. I add in the subtle crunch and acidity of chopped walnuts and a finale of heat from sliced jalapeño chiles. It’s a ride as the flavors unfold in your mouth. This is delicious pizza. Make sure to get this pizza in your holiday eating lineup! I hope you enjoy! One Love!

Winter Squash and Caramelized Onion Pizza
Ingredients
- 1 Small Delicata Squash Halved, seeds removed, sliced to 1/4 in thickness.
- 2 Large Brown Onions Sliced,1/4 in thickness.
- 1/4 cup Walnuts Roughly chopped.
- 1 Date Pitted and cut into small slices.
- 1 Jalapeño (optional) Thinly sliced. I like to use a red jalapeño for this recipe.
- 100 g Fresh Mozzarella (approximate)
- 1 tsp Minced Fresh Chives
- Olive Oil

Instructions
Caramelized Onions
- Heat a heavy bottom pot over medium high heat. Add 1-2 tbsp avocado or canola oil.
- Add onions to pot, Stir to coat in oil. Once the onions have begun to sweat, lower heat and cool till golden brown stirring often. About 1 hour.
- Season to taste with salt and pepper. I like to add a dash of soy sauce and a dash of Worcestershire Sauce (optional).
Roasted Delicata Squash
- Preheat oven to 375f. Line a baking sheet pan with parchment paper.
- Add squash slices to a small bowl, lightly coat in olive oil. Season with salt and pepper. Arrange on baking sheet with room between slices.
- Roast till just softened (easily pierced with a fork). Do not overcook, the squash will roast more on the pizza. About 10 minutes.

- Preheat your Ooni Pizza Oven for at least 30 minutes, I like to heat the center of the oven deck to around 850f before loading this style of pizza.
- Begin building the pizza by adding the dates and walnuts to the stretched pizza dough.
- Top with caramelized onions followed by the delicata squash. Add sliced jalapeños. Drizzle with olive oil and season with salt and pepper.
- Let the crust set on a wire rack for a least 20 seconds. Top with minced chives. Slice, serve immediately. I serve my pizza on this 14" Wooden Pizza Peel.
